Pop-up! April 12!
Brown butter Madeleines, strawb-matcha cake, bargain edibles, & my new products
Howdy all,
I’m doing a pop-up at Chinatown Centre (Spadina/Dundas) on Saturday, April 12th. That’s coming up real soon. I’m bringing some VBBG caramels and matcha fish, VBBG bargain bin deals, and some non-edible treats. The caramels and matcha fish are already up on the website. You can purchase through there (free delivery over $30!). However, nothing beats hand-to-hand combat business. Please bring cash or be prepared to input my email and then make small talk until e-transfer goes through.
I’m also clearing away my old stock, so I’ll have some deadstock edibles for real bargain deals. They are still good and give a good high, but it’s taking up space. I have some coconut oil that I messed up the dose on, so I’m selling that too. Come take them off my hands on April 12th!
Besides the VBBG/edibles things, I’m bringing sweets (just ye ol non edible desserts). Originally I was going to kick off resuming Extra Slice with this pop-up. But then like…people who have subscribed and pick up from Dundas West probably live around here…and would you even want to come to Chinatown Centre…and then I couldn’t stop thinking in circles and then I was like I’m going to shelf this idea. Somehow it became like the end of March, and I wasn’t able to reach a decision. I need to tell you about the pop-up, so yeah…Extra Slice is still on hold. Someone give me some feedback!!!
Back to the sweets though: I’m bringing madeleines and matcha cake! I made these fish madeleines with my new pans from korea. They’re brown butter and vanilla korean-style Madeleines. I’m going to enrobe them in Valrhona dulcey chocolate for the pop-up. The fish in the picture are nekkid bc I made these for a friend’s housewarming party, and then I ran out of time and was scrambling. They turned out so fragrant, warm, and delicious! I don’t think they need the chocolate, but I’ll do it for y’all.
What are korean-style madeleines? They are rounder, softer and more cake-like than the french ones, with an emphasis on a big hump. They are usually carved out and stuffed with ganache or buttercream, which seems like a big no-no, but the koreans love to bastardize the french cuisine. I love that for them.
Also matcha strawberry cake! A part of me thinks this is super basic and uncreative, but in my head there is no better spring cake flavor. Matcha chiffon, matcha buttercream, fresh strawberry compote. Do you hate buttercream? Yeah me too. BUT this buttercream is like really, really good. Yeah yeah, we’ve all been tricked by that line before. But “this is different” says someone who’s trying to sell you something. It’s a hybrid of german buttercream and korean buttercream, and honestly my best buttercream so far. I don’t have a pic, but uhh I’ll try to be more active on instagram and post pictures… Even if you’re uninterested in edibles, come buy a slice of cake!

So yeah that’s all the stuff I’m bringing. It’s going to be a very casual event that even the word “event” is too eventful. My friends are renting a unit in a corner of our favorite dead mall near all the accounting aunties as a little creative hobbit hole in the city. We are all introverts, and I’m not even promoting the pop-up very much (which is very not good…I should idk make a poster…). I’m worried I’m planning on bringing too much stuff for something that might have no turn out. If that happens maybe I’ll make some friends with some aunties…give them free cake in exchange for accounting advice…
There’s some hope of making this a monthly routine, but we are all gonna feel it out and assess. I am a bit worried bc this is all v much experimental for both parties & I’m unsure what to expect/prepare. But it would be cool if this becomes a regular pop-up. I’d love to have a base more central in Toronto as Dundas West is a bit out of the way for non-westies, and obv I’m happy to hang out with my friends. It’s so nice that they even thought of me to do this so I’m grateful ;_;
April 12! Chinatown Centre! Uhh undetermined time! But I’ll prob be there morning-evening or until I feel like it’s dead af and I wanna go home! Or the optimist in me says maybe I’ll sell out of everything and I can go home happy and rich :-D
